Recipe: Tabbouleh

Tabbouleh is a parsley salad from the Middle East and there are many versions and recipes. It goes beautifully with grilled meats so is a perfect BBQ side dish. Recipes often include cooked, cooled grains, but I like the freshness of the salad on its own.

For a bowl serving 4 generous helpings:

– 1 large bunch flat leaf parsley
– 1 bunch fresh mint
– 3 large tomatoes
– 1 red onion
– Optional grains

Dressing:

– Juice from 2 lemons
– Olive oil
– Salt and pepper to taste

Finely chop all the ingredient and add to a bowl. For the dressing mix the lemon juice in the ratio 2 lemon to 1 oil. Add the salt and pepper and stir together. Pour over the salad and toss.

You can also add cooked, cooled quinoa, bulgur or couscous for a more filling salad.
