Recipe: Beef in Coconut

Ingredients:

– 500g diced chuck steak

– 2 white onions

– 3 tbs oil 

– Cinnamon stick

– For the marinade:

– Fresh ginger (2 inches)

– 2 fresh chillies

– 3 cloves garlic

– 3 tsp paprika powder

– 3 tsp coriander powder

– 10 black pepper corns (or ½ tsp ground pepper)

– 1 tsp cinnamon

– 1 tsp chilli powder

– 1 tsp cumin

– 1 tsp poppy seeds

Method:

  1. Grind the fresh ginger, chillies, garlic, chilli powder, cinnamon, cumin, and poppy seeds into a paste. Add a tbl of oil and a little water and mix the paste into the beef.  Marinate in the fridge for an hour or for best results, overnight.
  2. Finely chop the onions and add to a pan with the bay leaves, cinnamon stick, and oil. Fry over a low heat until the onion is soft.
  3. Add the spiced beef mix and sauté the meat until browned.
  4. Add 500ml of water and simmer gently covered for an hour. 
  5. Add the coconut milk and continue to simmer until the beef is tender.
